SimpleFIN is an independent read-only service (about $15 a year, paid to them directly). It sends transactions and balances straight to Maali on your computer. Maali's servers are never in the path.
Bank connections are disabled in the public demo because it has no private device credential store. In the desktop app, the token is saved only on your computer.
